Turn the oven to 350F. In a 2 quart bowl, beat the egg whites until stiff. In a 1-quart bowl, beat the yolks until thick and lemon-colored. Beat hot water into the egg yolks and add salt and pepper. Fold yolks into stiffly beaten whites.

Melt butter in a 12-inch skillet or omelet pan, greasing the bottom and sides of the pan. Turn the egg mixture into the pan. Cover and cook over low heat until it is puffy and a light brown underneath.

Place the pan in the oven for 10 to 15 minutes, or until the top of the omelet is dry but not brown. Touch the top of the omelet lightly with the finger. If the top of the omelet does not stick to the finger, the omelet is done. Do not overlook. Loosen edges of the omelet, cut through the center and slip a spatula under the side. fold 1/2 over the other and press slightly to make it stay in place. Serve at once.

Makes 4-6 servings.

If you wish to add peppers, onions, or tomatoes to the omelet, saute them in a little butter in the pan and set aside. Put the vegetables and cheese on top of the omelet after it is done, but before folding it over.

- 6 cups warm water

Add the ground beef and brown, chopping it into fine pieces as it cooks. Chop the tomatoes in the blender for 4 seconds. Stir the tomatoes, chili powder, and olives into the beef.

Pour half the corn meal mush into the baking dish. Add a layer of half the meat mixture and a half of the cheese. Layer the rest of the mush, then the remaining meat mixture. Top with the rest of the cheese.

Bake at 350F for 25 minutes.

Tamale Pie Casserole

- 5 torn tortillas

- 5 more tortillas

- 5 more tortillas, and the remaining soup mixture

Test for doneness, either by using a cake tester or by pressing slightly on the top with a finger. If the indentation springs back, it is done, if it doesn't, cook for 5-6 more minutes.

Makes 2 loaves.

Oatmeal Lace Cookies

- 3/4 cups (6oz/185g) sugar
- 3/4 cup (2/1/2oz, 175g) quick-cooking oats
- 3/4 cup (4oz/125g) all-purpose flour

- 1/2 cup (4oz/125g) plus 2 tablespoons unsalted butter, melted
- 1/4 cup (2fl oz, 60ml) whole milk
- 1/4 cup (3oz/90g) unsulfured light molasses
- 1 tablespoon grated orange zest
- 1 teaspoon vanilla extract

Chocolate Coating
- 8 oz (250g) semisweet or bittersweet chocolate, chopped
- 2 teaspoons vegetable shortening

Makes about 4 dozen cookies

Preheat oven to 350F (180C). Line 2 baking sheets with parchment paper.

In a bowl, combine the sugar, oats, flour, and baking powder. Add the melted butter, milk, molasses, orange zest, and vanilla and stir until just blended. Let the batter stand for 15 minutes.

Drop heaping tablespoonfuls of the batter onto the prepared baking sheets, forming rounds about 1 inch (2.5cm) in diameter and spacing them 3 inches (7.5cm) apart. Bake the cookies until brown on the edges, about 10 minutes. Lift the parchment paper with the cookies and transfer to a work surface. Let cool completely.

Meanwhile, to make the Chocolate Coating: Combine the chocolate and shortening in the top pan of a double boiler or in a heatproof bowl. Set over (not touching) simmering water and stir until the chocolate is melted and smooth. Remove from the heat.

Gently peel the cookies from the paper. Line the baking sheets again with parchment paper. Dip about half of each cooled cookie in the Chocolate Coating. Place on the prepared baking sheets. Refrigerate until the chocolate sets, about 20 minutes. Gently remove the cookies from the paper.
