- Enough fat to cover bottom of skillet
Turn heat to medium high. Place fat and eggs in the skillet, 2 or 3 at a time. Cook just long enough for the whites to coagulate. Add enough water to cover the bottom of the pan. Place a lid on the pan. Cook until the yolks are the desired doneness.
This method is a good replacement for fried eggs, eliminates the problem of parched edge, reduces fat intake, and makes for easy clean-up.
High heat makes the egg tough.
