- 1-1/2 cups corn meal
- 1/2 cup all-purpose flour
- 1/8 teaspoon salt
- 2 tablespoons baking powder
- 1/2 teaspoon baking soda
- 1 egg, beaten
- 1 cup buttermilk
- 1/4 cup canola oil
- 1/4 cup fried bacon pieces
- 1 onion, finely chopped
- 1 cup canola oil for frying

In a 3-quart bowl, mix all ingredients, except the canola oil for frying, and drop from a tablespoon into hot oil and cook until brown. Drain on paper towel.

Serve with fried fish and cole slaw

Makes 1 dozen.
