Cheese Grits

- 1 cup grits
- 4 cups water
- 1 teaspoon salt
- 1/2 stick butter or margarine
- 2 eggs
- Small amount of milk
- 1 cup mild Cheddar cheese

In a 2-1/2 quart saucepan, combine the grits, water, butter or margarine, and salt and bring to a boil. Reduce to low heat and allow to simmer for about 15 minutes, stirring frequently, until the grits are soft, not stiff and not soupy. If they become too stiff, add a little hot water.

Grease a 2-quart casserole dish. Beat the eggs, adding enough milk to make 3/4 cup. Pour into the grits and stir. Pour the whole thing into the casserole dish. Bake at 350F for 25 minutes. Remove from the oven, top with the cheese, and bake for another 5 minutes.

For a zestier dish, use jalapeno Jack cheese or pepper cheese instead of the Cheddar.

Makes 6 servings.
