- 1/2/3 cups (8/1/2 oz/ 265 g) all-purpose flour
- 1 teaspoon ground ginger
- 3/4 teaspoon ground cinnamon
- Pinch of freshly grated nutmeg
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (4oz/125 g) unsalted butter, at room temperature
- 2/3 cup (5oz/155g) firmly packed brown sugar
- 1 large egg yolk
- 2 tablespoons unsulfured light molasses

Makes about 3 dozen cookies

First, in a bowl, combine the flour, ginger, cinnamon, nutmeg, baking soda, and salt. Stir until well blended. In a large bowl, using an electric mixer on medium speed, beat the butter and brown sugar until light and fluffy. Add the egg yolk and molasses and beat until well blended. Reduce the mixer speed to medium-low and gradually beat in the flour mixture until the dough is well blended and forms moist pebbles.

Turn out the dough onto a lightly floured work surface. Knead gently until smooth. Shape the dough into a squared-off log 8 inches (20 cm) long. Wrap in plastic wrap and refrigerate until firm, about 3 hours.

Preheat oven to 350F (180C). Line 2 baking sheets with parchment (baking) paper.

Unwrap the chilled dough and using a thin, sharp knife, cut the log into slices 1/4 inch (6 mm) thick. Arrange the slices on the prepared baking sheets, spacing them 1 inch (2 cm) apart.

Bake the cookies until slightly darker brown around the edges, about 10 minutes. Let cool on the baking sheets on wire racks for 15 minutes. Transfer to the racks to cool completely.
