Corn Muffins

- 2 eggs
- 1/2 cup melted margarine
- 1-1/2 cups butter milk
- 3/4 cup frozen corn kernels, thawed
- 1/2 cup shredded ham
- 1 cup cornmeal
- 1-1/2 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
 
Grease 2 standard-size muffin pans. In a 3-quart bowl, beat the eggs. Stir in margarine and buttermilk. Stir in the corn and ham. In a 1-quart bowl, combine the dry ingredients and mix well. Pour the dry ingredients into the corn and ham mixture and gently stir until mixed well. Pour into muffin pans, filling 2/3 full. Bake at 400F for 20 - 25 minutes.

Makes 12 muffins.
