- 1-1/2 cups yellow corn meal
- 6 cups warm water
- 1-1/2 teaspoon salt
- 1 cup chopped onion
- 2 tablespoons olive oil
- 1 pound lean ground beef
- 1 (14-1/2-ounce) can stewed tomatoes
- 4 teaspoons chili powder
- 1 (2 .25 ounce) can sliced, ripe olives
- 1 cup shredded Cheddar cheese

In a 2-1/2 quart saucepan, thoroughly mix the corn meal, water, and salt. Cook over medium-low heat about 5 minutes, stirring continuously until you have a soft mush. With a potato masher, mash out any lumps.

Grease a 3-quart baking dish. In a 12-inch skillet or 5-quart Dutch oven, saute the onion in the oil briefly.

Add the ground beef and brown, chopping it into fine pieces as it cooks. Chop the tomatoes in the blender for 4 seconds. Stir the tomatoes, chili powder, and olives into the beef.

Pour half the corn meal mush into the baking dish. Add a layer of half the meat mixture and a half of the cheese. Layer the rest of the mush, then the remaining meat mixture. Top with the rest of the cheese.

Bake at 350F for 25 minutes.

Makes 5-6 servings.
