- 2 cups sugar
- 1/2 cup butter or margarine
- 5 eggs
- 1 cup milk
- 1 tablespoon all-purpose flour
- 1 tablespoon corn meal
- 1/4 cup freshly squeezed lemon juice
- Grated rind of 2 large lemons
- 1 unbaked -inch pie shell
Cream the sugar and butter or margarine. Add the eggs and milk and beat well. Sift the flour and corn meal together and add to the wet ingredients. Add the lemon juice and grated lemon rind and blend well. Pour the mixture into the pie shell. Bake 450 for 10 minutes, then 350 for 40 minutes or until a knife, inserted halfway between the center and edge, comes out clean. Serve at room temperature.
Makes one 9-inch pie.
