- 1-1/2 cups canola oil
- 2 cups sugar
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 (8-ounce) can crushed pineapple, with the juice
- 1 cup chopped pecans
- 2 cups grated carrots
Grease a 13x9x2-inch cake pan. In a 3-quart bowl, mix the oil, sugar, and eggs. In a 1-quart bowl, sift the flour, baking powder, soda, salt, and cinnamon together.
Add the dry ingredients to the oil, sugar, and egg mixture. Add the pineapple, nuts, carrots. Pour into the greased pan.
Bake at 350F for 30-35 minutes
Icing
- 1 (8-ounce) package regular cream cheese, softened
- 1 stick butter or margarine
- 1 box powdered sugar
- 2 teaspoons vanilla
Beat all the ingredients together until smooth and spread on the cake when done and cooled.
