- 2 cups sifted all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1- 1/2 cups very ripe bananas, pureed in the blender
- 1 teaspoon lemon juice
- 2 eggs
- 1/2 cup shortening or 1 stick margarine
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup chopped nuts
Grease two 1-quart loaf pan. In a 1-quart bowl, sift the dry ingredients together. Put the bananas, lemon juice, and eggs in the blender together and puree.
In a 3-quart bowl, mix the shortening and sugar together until creamy and smooth. Add the banana-egg mixture and dry ingredients to the shortening and sugar mixture, alternating between the two and stirring after each addition.
Stir in the vanilla and nuts and pour into the loaf pans.
Bake at 325F for a little over 1 hour, or until a tester, inserted into the middle, comes out clean.
Makes 2 loaves.
