- 2 cups sugar
- 1 cup margarine
- 3 eggs
- 1 teaspoon vanilla
- 2 cups shredded raw zucchini
- 3 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1 cup raisins and/or 1-1/2 cups walnuts, broken
Grease two 1-quart loaf pans. In a 3-quart bowl, blend sugar and margarine. Add eggs and mix well. Add vanilla and stir in the zucchini.
In a 1-quart bowl, combine the flour, baking powder, soda, salt, and spices. Add to the egg and zucchini mixture and mix well. Add raisins and/or walnuts. Turn into the loaf pans. Bake at 325F for approximately 1 hour.
Test for doneness, either by using a cake tester or by pressing slightly on the top with a finger. If the indentation springs back, it is done, if it doesn't, cook for 5-6 more minutes.
Makes 2 loaves.
