- 4 eggs, beaten
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/8 teaspoon baking soda (not baking powder)
In a 1-quart bowl, combine eggs, milk, salt, and soda. Pour into a greased 12-inch skillet and cook over low heat, stirring gently with a fork.
Optional: Chopped green onions, green peppers, bits of ham, or cheese can be added by sauteeing them in a little oil before adding the eggs.
Makes 6 servings.
